4 tsp dry active yeast

Gluten free vegan bread that’s available in stores is usually quite pricey, and it can be made it at home for a fraction of the price. This is an easily made gluten free vegan bread, using a minimum of ingredients. The recipe is versatile and can be used to make a French style loaf, sandwich bread, or even rolls.

We’ll be using Bob’s Red Mill Gluten Free All Purpose Baking Flour for this recipe, as well as Bob’s Red Mill Active Dry Yeast. Active dry yeast usually needs to be activated before adding it to the dough mix.

Activate the yeast

Leave the active dry yeast in the 1/2 cup warm water (95-105F) together with a pinch of the sugar for 5 minutes, or until it bubbles.

Make the dough mix

Whisk the dry ingredients together in a large mixing bowl. Add the activated yeast to the dry ingredients and mix together, then add the other 1/2 cup of water, the olive oil, and the lemon juice. Mix the dough well until it's soft and sticky, adding extra water if needed.

Knead the dough

Cover your hands in flour prevent the dough from sticking and knead for 5 minutes.

Place dough in tray

Place the dough into a baguette bread tray, using wet hands to spread the dough. Use a cotton towel to cover the pan and leave it in a warm place until it doubles in size. It usually takes the dough 70 - 90 minutes to rise.

Score dough and bake

Score the top of the dough with a knife once it has risen and dust with flour. then place the bread pan into a 350F preheated oven for 35 to 45 minutes.
